Beet & Goat Cheese Tart
A simple tart that looks fancy and tastes delicious! Serve as an appetizer or as a light dinner with a soup/salad.
Feeds 2-4 people (depending on how hungry you are and how you’re serving it)
Ingredients:
1 puff pastry, thawed
1 bunch beets, scrubbed clean
4 oz. goat cheese
4 oz. cream cheese (or try subbing mascarpone cheese or Boursin if you’re feeling fancy!), softened
2 garlic scapes (1 stalk green garlic or 1 clove garlic), minced
a drizzle of olive oil
honey for drizzling
salt and pepper
minced chives, scallions, chopped walnuts (pecans, pine nuts), microgreens, balsamic glaze for drizzling, etc for serving (optional)
Directions:
Preheat your oven to 375 degrees Fahrenheit. Cut the greens off of your beets if not done already and set on a large sheet of tin foil that is large enough that you can envelope your beets entirely. Drizzle olive oil over the beets and sprinkle with salt and pepper. Tent the tin foil over the beets and fold all sides to create one big envelope. Bake for about 30 minutes or until a fork can easily pierce through the beet. If you have large beets, this may take closer to 45 min-1 hour. Let the beets cool and turn the oven up to 400 degrees Fahrenheit.
Once the beets are cool enough to hold, use a towel to wipe off the peel. Or, you can run the beets under running water and rub the peel off. Slice the beets into 1/8” slices.
In a small bowl, mix together cream cheese, goat cheese and minced garlic until smooth.
Roll out your puff pastry on a floured surface to an 8 × 10” rectangle. Set on a nonstick baking pan and poke all over with a fork to prevent bubbles. Bake in preheated oven for 10-12 minutes or until golden and puffed.
Spread the cheese mixture over the puff pastry, leaving a ½ inch border and top with sliced beets. Sprinkle with salt and pepper. Bake for 8-12 more minutes or until the cheese is melty and heated through.
Drizzle with honey and top with desired toppings (nuts, microgreens, scallions, chives, balsamic glaze, etc.)
Serve as an appetizer or with soup/salad for a light meal.
